Ingredients

  • 4 baby gem lettuces, halved
  • 200g feta cheese, crumbled
  • 1 red onion, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 180°C (350°F).

  2. In a large bowl, combine the baby gem lettuces, feta cheese, red onion, and cherry tomatoes.

  3. Drizzle with olive oil and balsamic vinegar. Season with salt and pepper.

  4. Toss to coat the ingredients evenly.

  5. Place the lettuce halves on a baking sheet and roast in the preheated oven for 8-10 minutes until wilted and slightly browned.

  6. Remove from the oven and transfer to a serving dish.

  7. Serve the warm baby gem and feta salad immediately.
