Ingredients

  • 1 lb chorizo, casings removed
  • 1 bag of tortilla chips
  • 1 cup shredded cheddar cheese
  • 1/2 cup chopped tomatoes
  • 1/4 cup diced red onion
  • 1/4 cup chopped cilantro
  • 1 jalapeno, sliced (optional)
  • 1 avocado, pitted and mashed
  • 1/4 cup sour cream
  • 1 tbsp lime juice
  • 1/2 tsp garlic powder
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 350°F (175°C).

  2. In a skillet, cook the chorizo over medium heat until fully cooked and crumbled. Drain any excess grease.

  3. Arrange the tortilla chips on a large baking sheet. Sprinkle the cooked chorizo evenly over the chips.

  4. Sprinkle the shredded cheddar cheese over the chorizo and chips.

  5. Bake in the preheated oven for 10-15 minutes, or until the cheese is melted and bubbly.

  6. Meanwhile, in a small bowl, combine the mashed avocado, sour cream, lime juice, garlic powder, and salt and pepper to taste. Mix well.

  7. Remove the nachos from the oven and top with chopped tomatoes, diced red onion, chopped cilantro, sliced jalapenos (if desired), and a dollop of the creamy guacamole.

  8. Serve immediately and enjoy!
