How To Make Thai Cucumber Salad

Ingredients
- 2 large cucumbers, thinly sliced
- 1 small red onion, thinly sliced
- 1/4 cup chopped cilantro
- 1/4 cup chopped mint leaves
- 1/4 cup chopped peanuts
- For the dressing:
- 3 tablespoons lime juice
- 2 tablespoons fish sauce
- 1 tablespoon honey
- 1 teaspoon sesame oil
- 1 small red chili, thinly sliced (optional)
Instructions

In a small bowl, whisk together the lime juice, fish sauce, honey, sesame oil, and red chili (if using).

In a large mixing bowl, combine the cucumbers, red onion, cilantro, mint leaves, and peanuts.
