  • 1/4 cup chopped peanuts
  • For the dressing:
  • 3 tablespoons lime juice
  • 2 tablespoons fish sauce
  • 1 tablespoon honey
  • 1 teaspoon sesame oil
  • 1 small red chili, thinly sliced (optional)

Instructions

  1. In a small bowl, whisk together the lime juice, fish sauce, honey, sesame oil, and red chili (if using).

  2. In a large mixing bowl, combine the cucumbers, red onion, cilantro, mint leaves, and peanuts.

  3. Pour the dressing over the cucumber mixture and toss well to combine.
