How To Make Speedy Thai Beef Salad

Ingredients
- 1 lb beef sirloin, thinly sliced
- 1 cup cherry tomatoes, halved
- 1 cucumber, thinly sliced
- 1 red onion, thinly sliced
- 1 cup fresh cilantro leaves
- 1/4 cup fresh mint leaves
- 1/4 cup roasted peanuts, chopped
- for the dressing:
- 3 tbsp fish sauce
- 2 tbsp lime juice
- 1 tbsp soy sauce
- 1 tbsp honey
- 1 garlic clove, minced
- 1 Thai chili, minced (optional)
Instructions

In a large bowl, combine the beef, cherry tomatoes, cucumber, red onion, cilantro, mint, and roasted peanuts.

In a small bowl, whisk together the fish sauce, lime juice, soy sauce, honey, garlic, and Thai chili (if using) to make the dressing.

Pour the dressing over the beef and vegetables, and toss well to combine.
