Ingredients

  • 1 cup uncooked couscous
  • 2 cups vegetable broth
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, diced
  • 1/2 cup cucumber, diced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • 1 garlic clove, minced
  • Salt and pepper to taste

Instructions

  1. In a pot, bring the vegetable broth to a boil. Add the couscous, cover, and remove from heat. Let it sit for 10 minutes, then fluff with a fork.

  2. In a large bowl, mix the couscous with the chopped vegetables, parsley, and mint.

  3. In a small bowl, whisk together the olive oil, lemon juice, garlic, salt, and pepper. Pour over the salad and toss to combine.

  4. Serve chilled.
