  • 1 cup couscous

  • 1/4 cup lemon juice
  • salt and pepper, to taste

Instructions

  1. Cook couscous according to package instructions.

  2. In a large bowl, combine cooked couscous, canned chicken, cucumber, red bell pepper, red onion, and parsley.

  3. In a separate bowl, whisk together olive oil, lemon juice, salt, and pepper.

  4. Pour the dressing over the couscous mixture and toss to combine.
