  • 1/4 cup chopped fresh parsley
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon Dijon mustard
  • Salt and pepper, to taste

Instructions

  1. In a large bowl, combine the cooked rice, charred spring onions, sliced olives, and chopped parsley.

  2. In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, salt, and pepper.

  3. Pour the dressing over the rice mixture and toss until well combined.

  4. Serve the salad at room temperature or chilled.
