How To Make Homemade Pho

Ingredients
- 2 pounds beef bones
- 1 onion, peeled and halved
- 3-inch piece of ginger, sliced
- 4 star anise pods
- 2 cinnamon sticks
- 3 cloves
- 1 tablespoon coriander seeds
- 1 tablespoon fennel seeds
- 6 cups beef or chicken broth
- 1 tablespoon fish sauce
- 1 teaspoon sugar
- 8 ounces rice noodles
- 1 pound beef (flank steak, sirloin, or eye of round), thinly sliced
- Fresh bean sprouts, Thai basil, cilantro, lime wedges, and sliced chili peppers for serving
Instructions

Preheat the oven to 400°F (200°C). Place the beef bones, onion, and ginger on a baking sheet and roast for 30 minutes until browned.

In a large pot, dry roast the star anise, cinnamon sticks, cloves, coriander seeds, and fennel seeds until fragrant.

Add the roasted beef bones, onion, and ginger to the pot along with the beef or chicken broth. Bring to a boil, then reduce heat and simmer for 3-4 hours.

Strain the broth into a clean pot, discarding the solids. Season the broth with fish sauce and sugar.

Cook the rice noodles according to package instructions. Drain and set aside.

Divide the cooked noodles among 4 bowls. Top with sliced beef.

Ladle the hot broth over the noodles and beef.

Serve the pho with bean sprouts, Thai basil, cilantro, lime wedges, and chili peppers on the side.
