Ingredients

  • 4 eggs
  • 2 cups of fresh spinach, chopped
  • 1/2 cup of coconut milk
  • 1 tsp of turmeric powder
  • Salt and pepper to taste
  • 4 parathas

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. In a bowl, whisk together the eggs, coconut milk, turmeric powder, salt, and pepper.

  3. Stir in the chopped spinach.

  4. Grease a baking dish and pour the egg mixture into it.

  5. Bake in the preheated oven for 15-20 minutes, or until the eggs are set.

  6. While the eggs are baking, heat the parathas according to package instructions.

  7. Serve the baked eggs with warm parathas.
