Salad Espanol Recipe

With the addition of oranges, basil, rosemary, honey and white wine vinegar, this is sure to please any of your guests.

A wonderful salad that the Spanish has shared with the world, and you should try it yourself! This incredible salad has a variety of flavors that would sure to satisfy your tastebuds.

Ingredients

  • 1 ½ cups ripe olives, chopped coarsely
  • 3 tbsp honey
  • cup white wine vinegar
  • cup salad oil
  • 1 tsp rosemary, crumbled
  • ½ tsp basil, crumbled
  • ¼ tsp black pepper
  • 2 Romaine lettuce, small, heads
  • ½ cup silvered almonds, toasted
  • ½ red onion, medium, thinly sliced
  • 3 oranges, peeled and cut in segments

Instructions

  1. Combine olives, honey, vinegar, oil, rosemary, basil and pepper in a small bowl.
  2. Stir well to blend.
  3. Let stand overnight, refrigerated, to blend flavors. Wash, core and cut romaine into bite sized pieces.
  4. Place in a large salad bowl, toss well.
  5. Serve immediately.
