How To Make Steak, Roasted Pepper & Pearl Barley Salad

Ingredients
- 1 lb steak (ribeye, sirloin, or your choice)
- 2 bell peppers (red, yellow, or orange)
- 1 cup pearl barley
- 4 cups water
- 1 tbsp olive oil
- Salt and pepper, to taste
- 4 cups mixed greens
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, thinly sliced
- 1/4 cup feta cheese, crumbled
- Balsamic vinaigrette, for dressing

Preheat the grill or stovetop grill pan to high heat.

Season the steak with salt and pepper. Grill for about 4-5 minutes per side for medium-rare, or to your desired doneness. Remove from heat and let it rest for 5 minutes before slicing.

Preheat the oven to 400°F (200°C). Cut the bell peppers into quarters and remove the seeds. Place them on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast for 15-20 minutes until soft and slightly charred. Remove from the oven and let them cool before slicing.

In a medium saucepan, bring the water to a boil. Add the pearl barley and simmer for 20-25 minutes, or until tender. Drain any excess water and set aside to cool.

In a large salad bowl, combine the mixed greens, cherry tomatoes, red onion, and feta cheese.

Add the sliced steak, roasted peppers, and cooked pearl barley to the salad bowl. Toss gently to combine.

Serve the salad with balsamic vinaigrette on the side.
