  • 4 large potatoes, peeled and diced
  • 1 onion, diced
  • 4 cloves of garlic, minced
  • 1 tsp black pepper
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper
  • 4 cups vegetable broth
  • 1 cup milk
  • Salt to taste
  • Chopped fresh parsley for garnish

Instructions

  1. In a large pot, heat some olive oil over medium heat.

  2. Add the diced onion and minced garlic, and sauté until fragrant and translucent.

  3. Add the diced potatoes, black pepper, paprika, and cayenne pepper to the pot. Stir well to coat the potatoes with the spices.

  4. Pour in the vegetable broth and bring to a boil. Reduce heat and let simmer for about 20 minutes, or until the potatoes are tender.

  5. Using an immersion blender or a regular blender, carefully blend the soup until smooth and creamy.

  6. Return the soup to the pot and stir in the milk. Add salt to taste.

  7. Simmer for another 5 minutes to heat through.

  8. Serve the peppered potato soup in bowls, garnished with chopped fresh parsley.
