How To Make Refreshing Korean Cucumber Salad

Ingredients
- 4 small cucumbers, thinly sliced
- 1 teaspoon salt
- 2 tablespoons rice vinegar
- 1 tablespoon soy sauce
- 1 tablespoon sesame oil
- 1 teaspoon sugar
- 1/2 teaspoon red pepper flakes (optional)
- 2 green onions, thinly sliced
- 1 tablespoon toasted sesame seeds
Instructions

Place the sliced cucumbers in a colander and sprinkle with salt. Let them sit for 10 minutes to draw out excess moisture.

Meanwhile, in a small bowl, whisk together the rice vinegar, soy sauce, sesame oil, sugar, and red pepper flakes (if using).

Rinse the cucumbers under cold water and pat dry with paper towels.

In a large bowl, combine the cucumbers, green onions, and dressing. Toss until well coated.
