Ingredients

  • 6 medium potatoes, peeled and diced
  • 6 slices bacon, cooked and crumbled
  • 1/2 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 2 tablespoons apple cider vinegar
  • 2 green onions, thinly sliced
  • Salt and pepper to taste

Instructions

  1. Place the diced potatoes in a pot of salted water and bring to a boil. Cook for about 10-12 minutes until tender, then drain and set aside to cool.

  2. In a small bowl, whisk together the mayonnaise, Dijon mustard, apple cider vinegar, salt, and pepper to make the dressing.

  3. In a large bowl, combine the cooled potatoes, crumbled bacon, and sliced green onions. Pour the dressing over the potato mixture and gently toss to coat.

  4. Refrigerate for at least 1 hour to allow the flavors to meld together.

  5. Serve chilled and garnish with additional bacon and green onions if desired.
