How To Make Old-Fashioned Potato Salad

Ingredients

  • 4 cups of potatoes, peeled and diced
  • 2 eggs
  • 1/2 cup of mayonnaise
  • 2 tablespoons of yellow mustard
  • 1/4 cup of red onion, finely chopped
  • 1/4 cup of dill pickles, diced
  • 1/4 cup of fresh parsley, chopped
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1/2 teaspoon of paprika

Instructions

  1. Boil the diced potatoes in salted water until tender, about 10-15 minutes. Drain and let cool.

  2. Meanwhile, hard-boil the eggs by placing them in a pot of cold water. Bring to a boil, then reduce heat and simmer for 9 minutes. Remove from heat, cool in cold water, then peel and chop.

  3. In a large bowl, combine mayonnaise, mustard, red onion, pickles, parsley, salt, black pepper, and paprika.

  4. Add the cooked and cooled potatoes to the bowl and gently stir until well coated with the dressing.

  5. Carefully fold in the chopped eggs.

  6. Refrigerate for at least 1 hour before serving to allow the flavors to meld together.

  7. Sprinkle with additional paprika and parsley before serving.
