  • 2 large potatoes, peeled and grated
  • 1 small onion, finely chopped
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • vegetable oil, for frying

Instructions

  1. Place the grated potatoes on a clean kitchen towel and squeeze out any excess moisture.

  2. In a large bowl, combine the grated potatoes, chopped onion, flour, salt, and black pepper. Mix well.

  3. Heat about 1/4 inch of vegetable oil in a large skillet over medium heat.

  4. Take a small handful of the potato mixture and shape it into a flat cake. Repeat with the remaining mixture.

  5. Carefully place the potato cakes into the hot oil and cook for about 3-4 minutes on each side, or until golden brown and crispy.

  6. Remove the potato cakes from the skillet and place them on a paper towel-lined plate to drain any excess oil.

  7. Serve the potato cakes hot with sour cream or applesauce.
