How To Make Nutty Chicken Grain Salad

Ingredients
- 2 cups cooked grain mix (such as quinoa and brown rice)
- 2 cups cooked chicken breast, shredded
- 1/2 cup chopped almonds
- 1/2 cup dried cranberries
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh mint
- 1/4 cup chopped red onion
- 1/4 cup crumbled feta cheese
- 2 tablespoons lemon juice
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions

In a large bowl, combine the cooked grain mix, shredded chicken, almonds, dried cranberries, parsley, mint, red onion, and feta cheese.

In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper.
