Ingredients

  • 2 cups cooked grain mix (such as quinoa and brown rice)
  • 2 cups cooked chicken breast, shredded
  • 1/2 cup chopped almonds
  • 1/2 cup dried cranberries
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 1/4 cup chopped red onion
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the cooked grain mix, shredded chicken, almonds, dried cranberries, parsley, mint, red onion, and feta cheese.

  2. In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper.

  3. Pour the dressing over the salad mixture and toss until everything is well coated.

  4. Serve chilled and enjoy!
