Ingredients

  • 1 small ripe melon, cut into bite-sized cubes
  • 2 cups cherry tomatoes, halved
  • 6 slices prosciutto, torn into smaller pieces
  • 1/4 cup fresh mint leaves, chopped
  • 2 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar
  • Salt and black pepper, to taste

Instructions

  1. In a large bowl, combine the melon cubes, cherry tomatoes, torn prosciutto, and chopped mint leaves.

  2. In a small bowl, whisk together the extra virgin olive oil, balsamic vinegar, salt, and black pepper.

  3. Pour the dressing over the salad and gently toss to combine.
