- 1 small ripe melon, cut into bite-sized cubes
- 2 cups cherry tomatoes, halved
- 6 slices prosciutto, torn into smaller pieces
- 1/4 cup fresh mint leaves, chopped
- 2 tbsp extra virgin olive oil
- 1 tbsp balsamic vinegar
- Salt and black pepper, to taste

In a large bowl, combine the melon cubes, cherry tomatoes, torn prosciutto, and chopped mint leaves.
