Ingredients

  • 2 ripe tomatoes, diced
  • 1 small melon, diced
  • 1/4 red onion, thinly sliced
  • 1/4 cup fresh basil leaves, torn
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the diced tomatoes, melon, red onion, and torn basil leaves.

  2. In a small bowl, whisk together the olive oil and balsamic vinegar. Season with salt and pepper.

  3. Drizzle the dressing over the tomato and melon mixture and gently toss to coat.

  4. Serve immediately and enjoy!
