How To Make Mumbai Potato Wraps with Minted Yogurt Relish

Ingredients
- 4 large flour tortillas
- 4 medium-sized potatoes, boiled and mashed
- 1 small onion, finely chopped
- 1 green chili, finely chopped
- 1 tsp ginger-garlic paste
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1/2 tsp turmeric powder
- 1/2 tsp red chili powder
- Salt to taste
- Oil for shallow frying
- 1 cup plain yogurt
- 1/4 cup fresh mint leaves, chopped
- 1/4 cup fresh coriander leaves, chopped
- 1/2 tsp cumin powder
- 1/2 tsp chaat masala
- Salt to taste
Instructions

In a mixing bowl, combine the mashed potatoes, chopped onions, green chili, ginger-garlic paste, cumin powder, coriander powder, turmeric powder, red chili powder, and salt. Mix well.

Heat a little oil in a pan and add the potato mixture. Cook for 5 minutes until the spices are well incorporated and the potatoes are heated through.

In a separate bowl, whisk together the yogurt, mint leaves, coriander leaves, cumin powder, chaat masala, and salt to make the minted yogurt relish. Set aside.

Warm the flour tortillas in a dry pan or microwave for a few seconds to make them pliable.

Place a spoonful of the spiced potato mixture in the center of each tortilla and fold the sides to form a wrap.

Heat a little oil in a non-stick skillet and cook the wraps on medium heat for a few minutes on each side until golden brown and crispy.
