Ingredients

  • 4 cups of cubed honeydew melon
  • 4 slices of prosciutto, torn into pieces
  • 4 cups of mixed greens
  • 1/4 cup of crumbled feta cheese
  • 1/4 cup of chopped pistachios
  • 2 tbsp of extra-virgin olive oil
  • 1 tbsp of honey
  • 1 tbsp of white wine vinegar
  • Salt and pepper to taste

Instructions

  1. In a large bowl, whisk together olive oil, honey, white wine vinegar, salt and pepper.

  2. Add honeydew, prosciutto, mixed greens, feta cheese and pistachios to the bowl and toss to coat with dressing.

  3. Serve immediately and enjoy!
