How To Make Salad of Melon & Tomatoes with Mint & Elderflower Dressing

- 1 small ripe melon, sliced
- 4 ripe tomatoes, sliced
- 1/4 cup fresh mint leaves, torn
- 1/4 cup elderflower cordial
- 2 tbsp olive oil
- 1 tbsp lemon juice
- Salt, to taste
- Pepper, to taste

In a large bowl, combine the melon slices, tomato slices, and torn mint leaves.

In a separate small bowl, whisk together the elderflower cordial, olive oil, lemon juice, salt, and pepper to make the dressing.
