How To Make BBQ Vegetables with Goat’s Cheese

Ingredients
- 2 zucchinis, sliced
- 1 eggplant, sliced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 red onion, sliced
- 1 cup cherry tomatoes
- 2 tbsp olive oil
- Salt and pepper, to taste
- 200g goat’s cheese, crumbled
Instructions

Preheat the grill to medium-high heat.

In a large bowl, toss the zucchini, eggplant, bell peppers, red onion, and cherry tomatoes with olive oil, salt, and pepper.

Place the vegetables on the grill and cook for about 10-15 minutes, or until they are tender and lightly charred, flipping them occasionally.

Remove the grilled vegetables from the grill and transfer them to a serving platter.

Sprinkle the crumbled goat’s cheese over the top of the grilled vegetables.
