Ingredients

  • 2 zucchinis, sliced
  • 1 eggplant, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 red onion, sliced
  • 1 cup cherry tomatoes
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • 200g goat’s cheese, crumbled

Instructions

  1. Preheat the grill to medium-high heat.

  2. In a large bowl, toss the zucchini, eggplant, bell peppers, red onion, and cherry tomatoes with olive oil, salt, and pepper.

  3. Place the vegetables on the grill and cook for about 10-15 minutes, or until they are tender and lightly charred, flipping them occasionally.

  4. Remove the grilled vegetables from the grill and transfer them to a serving platter.

  5. Sprinkle the crumbled goat’s cheese over the top of the grilled vegetables.

  6. Serve the BBQ vegetables with goat’s cheese hot and enjoy!
