How To Make Low-Carb Cauliflower Mock Potato Salad

Ingredients
- 1 medium head of cauliflower
- 4 boiled eggs, chopped
- 2 stalks of celery, diced
- 1/4 cup chopped red onion
- 1/4 cup chopped dill pickles
- 1/4 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon apple cider vinegar
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Chopped fresh parsley for garnish
- Optional toppings: bacon bits, sliced green onions
Instructions

Cut the cauliflower into florets and steam or microwave until tender. Allow it to cool completely.

In a large bowl, combine the chopped boiled eggs, celery, red onion, and dill pickles.

In a separate small bowl, whisk together the mayonnaise, Dijon mustard, apple cider vinegar, garlic powder, salt, and pepper.

Add the cooled cauliflower to the bowl with the egg mixture and pour the dressing over it. Mix well until everything is coated evenly.
