  • 5 oz mixed greens
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup cucumber, sliced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup kalamata olives, pitted and halved
  • 1/4 cup crumbled feta cheese
  • 2 tbsp chopped fresh parsley
  • 2 tbsp chopped fresh mint
  • 1/4 cup extra-virgin olive oil
  • 2 tbsp freshly squeezed lemon juice
  • 1 garlic clove, minced
  • 1/2 tsp Dijon mustard
  • Salt and pepper, to taste

Instructions

  1. In a large bowl, combine the mixed greens, cherry tomatoes, cucumber, red onion, kalamata olives, feta cheese, parsley, and mint.

  2. In a small bowl, whisk together the olive oil, lemon juice, garlic, and Dijon mustard. Season with salt and pepper.

  3. Drizzle the dressing over the salad and toss to coat. Serve immediately.
