  • cupsblack beansrinsed and well-drained
  • 2cornshucked
  • 1bell pepperorange, yellow, or red, chopped
  • 1cupcherry tomatoesquartered
  • 1cupred onionchopped
  • ½cupfresh cilantrofinely chopped
  • 1jalapeñomedium, finely chopped
  • ½tsplime zestpreferably organic
  • 2tbsplime juiceto taste
  • ¼cupextra-virgin olive oil
  • ¼cupwhite wine vinegar
  • ½tspchili powder
  • ½tspground cumin
  • ½tspsaltto taste
  • sliced avocadofor garnish, optional
  • crumbled fetafor garnish, optional
  • lime wedgesfor garnish, optional


  1. In a large serving bowl, combine all of the ingredients and toss to combine. Taste, and adjust as necessary until the flavors really pop.

  2. Cover and chill for at least 2 hours or overnight to enhance the flavors.

  3. Serve in individual bowls as is, or with any of the garnishes listed.

  4. Leftovers keep well for up to 4 days. Wake up the flavors with an extra squeeze of lime juice or a tiny splash of vinegar.
