Ingredients

  • 1 lb flaked salmon
  • 4 cups mixed salad greens
  • 1 cucumber, thinly sliced
  • 1/2 red onion, thinly sliced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup chopped fresh dill
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh chives
  • Salt and pepper to taste
  • For the honey dressing:
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. In a large mixing bowl, combine the flaked salmon, mixed salad greens, cucumber, red onion, cherry tomatoes, dill, parsley, and chives.

  2. In a small bowl, whisk together the olive oil, apple cider vinegar, honey, Dijon mustard, salt, and pepper to make the honey dressing.

  3. Pour the honey dressing over the salad and toss until well coated.

  4. Season with additional salt and pepper to taste.

  5. Serve the flaked salmon salad immediately and enjoy!
