Ingredients
- 1 fennel bulb, thinly sliced
- 1 cup cherries, pitted and halved
- 1 cup cooked lentils
- 100g goat’s cheese, crumbled
- 2 tbsp chopped fresh mint
- 2 tbsp balsamic vinegar
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions

In a large bowl, combine the sliced fennel, cherries, cooked lentils, crumbled goat’s cheese, and chopped mint.

In a separate small bowl, whisk together the balsamic vinegar, olive oil, salt, and pepper.
