Ingredients

  • 1 fennel bulb, thinly sliced
  • 1 cup cherries, pitted and halved
  • 1 cup cooked lentils
  • 100g goat’s cheese, crumbled
  • 2 tbsp chopped fresh mint
  • 2 tbsp balsamic vinegar
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the sliced fennel, cherries, cooked lentils, crumbled goat’s cheese, and chopped mint.

  2. In a separate small bowl, whisk together the balsamic vinegar, olive oil, salt, and pepper.

  3. Pour the dressing over the salad and toss gently to combine.

  4. Serve the salad chilled or at room temperature.
