How To Make Warm Mushroom, Lentil & Goat’s Cheese Salad

Ingredients
- 8 ounces of mushrooms, sliced
- 1 cup of cooked green lentils
- 4 cups of mixed salad greens
- 1/4 cup of crumbled goat’s cheese
- 1/4 cup of chopped walnuts
- 2 tablespoons of olive oil
- 2 tablespoons of balsamic vinegar
- Salt and pepper to taste
Instructions

In a large skillet, heat olive oil over medium heat. Add mushrooms and cook until golden brown, about 8-10 minutes.

In a large bowl, combine the cooked lentils, mixed salad greens, crumbled goat’s cheese, and chopped walnuts.

Add the cooked mushrooms to the salad mixture.

In a small bowl, whisk together the balsamic vinegar, olive oil, salt, and pepper. Drizzle the dressing over the salad and toss to coat evenly.
