Serves:

Ingredients

  • 8 ounces of mushrooms, sliced
  • 1 cup of cooked green lentils
  • 4 cups of mixed salad greens
  • 1/4 cup of crumbled goat’s cheese
  • 1/4 cup of chopped walnuts
  • 2 tablespoons of olive oil
  • 2 tablespoons of balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add mushrooms and cook until golden brown, about 8-10 minutes.

  2. In a large bowl, combine the cooked lentils, mixed salad greens, crumbled goat’s cheese, and chopped walnuts.

  3. Add the cooked mushrooms to the salad mixture.

  4. In a small bowl, whisk together the balsamic vinegar, olive oil, salt, and pepper. Drizzle the dressing over the salad and toss to coat evenly.

  5. Serve warm and enjoy!
