Ingredients

  • 8 hard-boiled eggs, peeled and chopped
  • 1/4 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1/4 cup celery, finely chopped
  • 2 tablespoons red onion, finely chopped
  • Salt and pepper, to taste
  • 8 slices bread
  • Lettuce leaves, for serving
  • Tomato slices, for serving

Instructions

  1. In a large bowl, combine the chopped eggs, mayonnaise, Dijon mustard, celery, and red onion. Mix well.

  2. Season with salt and pepper to taste.

  3. Spread the egg salad mixture evenly onto 4 slices of bread.

  4. Top with lettuce leaves and tomato slices.

  5. Place the remaining bread slices on top to make sandwiches.

  6. Cut the sandwiches in half or quarters, if desired.

  7. Serve and enjoy!
