How To Make Chicken Potato Salad Recipe

Ingredients
- 2 boneless, skinless chicken breasts
- 4 medium potatoes, peeled and diced
- 1/2 cup mayonnaise
- 2 tablespoons Dijon mustard
- 1 tablespoon lemon juice
- 1/4 cup chopped fresh parsley
- 1/4 cup diced red onion
- Salt and pepper, to taste

In a large pot, bring water to a boil. Add the diced potatoes and cook until tender, about 10 minutes. Drain and set aside.

While the potatoes are cooking, season the chicken breasts with salt and pepper. Heat a large skillet over medium heat and cook the chicken until cooked through, about 6-8 minutes per side. Remove from heat and let cool. Once cooled, dice into bite-sized pieces.

In a large mixing bowl, combine the mayonnaise, Dijon mustard, lemon juice, parsley, and red onion. Mix well.

Add the cooked potatoes and chicken to the bowl with the dressing. Gently toss until everything is coated evenly. Season with salt and pepper to taste.

Refrigerate for at least 30 minutes to allow the flavors to meld together. Serve chilled.
