Ingredients

  • 1 whole chicken
  • 2 sweet potatoes, peeled and diced
  • 1 bunch of fresh parsley, finely chopped
  • 2 cloves of garlic, minced
  • 1 lemon, zested and juiced
  • 1/4 cup of olive oil
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. Season the chicken with salt and pepper, inside and out. Place it on a roasting pan.

  3. In a bowl, mix together the lemon zest, minced garlic, and half of the chopped parsley. Rub this mixture all over the chicken.

  4. Roast the chicken in the preheated oven for about 1 hour or until the internal temperature reaches 165°F (74°C).

  5. While the chicken is roasting, prepare the sweet potato gremolata salad. In a separate bowl, combine the diced sweet potatoes, remaining parsley, lemon juice, olive oil, salt, and pepper. Toss well to coat.

  6. Spread the sweet potato mixture on a baking sheet and roast in the oven for 25-30 minutes, or until the sweet potatoes are tender and lightly golden.

  7. Remove the chicken from the oven and let it rest for a few minutes before carving.

  8. Serve the roast chicken with the sweet potato gremolata salad.
