How To Make Roast chicken with sweet potato gremolata salad

Ingredients
- 1 whole chicken
- 2 sweet potatoes, peeled and diced
- 1 bunch of fresh parsley, finely chopped
- 2 cloves of garlic, minced
- 1 lemon, zested and juiced
- 1/4 cup of olive oil
- Salt and pepper, to taste
Instructions

Preheat the oven to 375°F (190°C).

Season the chicken with salt and pepper, inside and out. Place it on a roasting pan.

In a bowl, mix together the lemon zest, minced garlic, and half of the chopped parsley. Rub this mixture all over the chicken.

Roast the chicken in the preheated oven for about 1 hour or until the internal temperature reaches 165°F (74°C).

While the chicken is roasting, prepare the sweet potato gremolata salad. In a separate bowl, combine the diced sweet potatoes, remaining parsley, lemon juice, olive oil, salt, and pepper. Toss well to coat.

Spread the sweet potato mixture on a baking sheet and roast in the oven for 25-30 minutes, or until the sweet potatoes are tender and lightly golden.

Remove the chicken from the oven and let it rest for a few minutes before carving.
