Ingredients

  • 8 oz pasta
  • 4 slices bacon, cooked and crumbled
  • 1 avocado, diced
  • 1/4 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 2 tbsp fresh cilantro, chopped
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.

  2. In a large bowl, combine the cooked pasta, crumbled bacon, diced avocado, cherry tomatoes, red onion, and cilantro.

  3. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Pour the dressing over the salad and toss to combine.

  4. Serve the salad warm and enjoy!
