- 4 cups mixed salad greens
- 1 cup roasted butternut squash, diced
- 1 cup roasted Brussels sprouts, halved
- 1 cup pomegranate seeds
- 1/2 cup toasted pecans, chopped
- 1/4 cup crumbled feta cheese
- 1/4 cup dried cranberries
- 1/4 cup saffron-infused white wine vinegar
- 2 tablespoons extra virgin olive oil
- 1 tablespoon honey
- Salt and pepper to taste

In a large bowl, combine the salad greens, butternut squash, Brussels sprouts, pomegranate seeds, pecans, feta cheese, and dried cranberries.
