Ingredients

  • 2 aubergines, sliced
  • 2 bell peppers, sliced
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp honey
  • Salt and pepper, to taste
  • Fresh basil leaves, for garnish

Instructions

  1. Preheat the grill to medium-high heat.

  2. Brush the aubergine and pepper slices with olive oil and season with salt and pepper.

  3. Grill the vegetables for about 5-7 minutes on each side, or until they are charred and softened.

  4. In a small bowl, whisk together the balsamic vinegar, honey, salt, and pepper to make the dressing.

  5. Place the grilled aubergine and peppers in a serving bowl and drizzle the dressing over them.

  6. Toss gently to coat the vegetables with the dressing.

  7. Garnish with fresh basil leaves.

  8. Serve the salad chilled or at room temperature.
