How To Make Prawn & Chorizo Skewers with Gremolata

Ingredients
- 16 large prawns, peeled and deveined
- 8 slices of chorizo, cut into chunks
- 2 cloves of garlic, minced
- 1 lemon, zested and juiced
- 1/4 cup of fresh parsley, chopped
- 1/4 cup of olive oil
- Salt and pepper to taste
Instructions

In a bowl, combine the minced garlic, lemon zest, lemon juice, chopped parsley, olive oil, salt, and pepper. This is the gremolata.

Thread the prawns and chunks of chorizo onto skewers, alternating between the two.

Brush the gremolata mixture onto the skewers, making sure to coat all sides.

Preheat a grill or grill pan to medium-high heat.

Grill the skewers for about 2-3 minutes on each side, or until the prawns are cooked through and the chorizo is crispy.

Serve the skewers hot with additional lemon wedges, if desired.
