Ingredients

  • 1 cup of lentils
  • 1 red pepper, diced
  • 1/4 cup of red onion, finely chopped
  • 1/4 cup of fresh parsley, chopped
  • 2 tablespoons of olive oil
  • 1 tablespoon of lemon juice
  • salt and pepper to taste

Instructions

  1. Cook the lentils according to package instructions. Drain and let cool.

  2. In a bowl, combine the cooked lentils, diced red pepper, chopped red onion, and fresh parsley.

  3. In a separate small bowl, whisk together the olive oil, lemon juice, salt, and pepper.

  4. Pour the dressing over the lentil mixture and toss until well coated.

  5. Serve chilled and enjoy!
