How To Make Lentil & red pepper salad

Ingredients
- 1 cup of lentils
- 1 red pepper, diced
- 1/4 cup of red onion, finely chopped
- 1/4 cup of fresh parsley, chopped
- 2 tablespoons of olive oil
- 1 tablespoon of lemon juice
- salt and pepper to taste
Instructions

Cook the lentils according to package instructions. Drain and let cool.

In a bowl, combine the cooked lentils, diced red pepper, chopped red onion, and fresh parsley.

In a separate small bowl, whisk together the olive oil, lemon juice, salt, and pepper.

Pour the dressing over the lentil mixture and toss until well coated.
