How To Make New Potato & Sundried Tomato Salad

Ingredients
- 1 lb new potatoes, halved
- 1/2 cup sundried tomatoes, chopped
- 1/4 cup red onion, thinly sliced
- 1/4 cup fresh basil leaves, chopped
- 2 tbsp olive oil
- 1 tbsp white wine vinegar
- Salt and pepper to taste
Instructions

Boil the new potatoes in salted water until tender, about 10-15 minutes. Drain and let cool.

In a large bowl, combine the cooked new potatoes, sundried tomatoes, red onion, and fresh basil.

In a small bowl, whisk together the olive oil, white wine vinegar, salt, and pepper.

Pour the dressing over the potato mixture and toss gently to combine.
