Ingredients

  • 1 lb new potatoes, halved
  • 1/2 cup sundried tomatoes, chopped
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh basil leaves, chopped
  • 2 tbsp olive oil
  • 1 tbsp white wine vinegar
  • Salt and pepper to taste

Instructions

  1. Boil the new potatoes in salted water until tender, about 10-15 minutes. Drain and let cool.

  2. In a large bowl, combine the cooked new potatoes, sundried tomatoes, red onion, and fresh basil.

  3. In a small bowl, whisk together the olive oil, white wine vinegar, salt, and pepper.

  4. Pour the dressing over the potato mixture and toss gently to combine.

  5. Serve chilled and enjoy!
