Ingredients
- 3 pounds porketta roast
- 2 tablespoons olive oil
- 2 tablespoons fennel seeds
- 1 tablespoon dried rosemary
- 1 tablespoon dried thyme
- 1 tablespoon dried sage
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 teaspoon black pepper
- 1 teaspoon salt
Instructions

Preheat the oven to 350°F (175°C).

In a small bowl, mix together the fennel seeds, dried rosemary, dried thyme, dried sage, garlic powder, onion powder, black pepper, and salt.

Rub the porketta roast with olive oil, then coat it generously with the herb and spice mixture.

Place the roast on a rack in a roasting pan and roast for 2 hours, or until the internal temperature reaches 145°F (63°C).
