Ingredients

  • 4 lbs rib roast
  • 2 tbsp olive oil
  • 2 tbsp minced garlic
  • 2 tbsp fresh rosemary, chopped
  • 1 tbsp salt
  • 1 tbsp black pepper

Instructions

  1. Preheat the oven to 450°F (230°C).

  2. Rub the rib roast with olive oil, minced garlic, chopped rosemary, salt, and black pepper.

  3. Place the rib roast on a rack in a roasting pan, fat side up.

  4. Roast the rib roast in the preheated oven for 15 minutes.

  5. Reduce the oven temperature to 325°F (165°C) and continue roasting for about 20 minutes per pound, or until the internal temperature reaches 135°F (57°C) for medium-rare.

  6. Remove the rib roast from the oven and tent it loosely with aluminum foil. Let it rest for 15-20 minutes before carving.

  7. Slice the rib roast and serve.
