Ingredients

  • 2 lbs pork loin roast
  • 2 apples, cored and sliced
  • 1 onion, thinly sliced
  • 2 tbsp olive oil
  • 2 tsp dried rosemary
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup apple juice
  • 1/4 cup maple syrup

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. In a large roasting pan, place the pork loin roast on top of the sliced onions and apples.

  3. Drizzle the olive oil over the roast and season with dried rosemary, salt, and black pepper.

  4. Pour the apple juice and maple syrup over the roast.

  5. Roast the pork in the preheated oven for about 1 hour and 30 minutes, or until the internal temperature reaches 145°F (63°C).

  6. Remove the pork from the oven and let it rest for 10 minutes before slicing.

  7. Serve the sliced roast pork with the roasted apples and onions. Enjoy!
