Ingredients

  • 1 cup wild rice
  • 1 cup brown rice
  • 2 ½ cups water
  • 1 tsp salt
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1 red bell pepper, diced
  • 1 zucchini, diced
  • ½ cup peas
  • ¼ cup chopped fresh parsley
  • Salt and pepper to taste

Instructions

  1. Rinse the wild and brown rice under cold water.

  2. In a large pot, bring the water to a boil. Add the rice and salt, reduce heat to low, cover, and simmer for 35-40 minutes or until the rice is tender and all the water is absorbed.

  3. In a separate pan, heat the olive oil over medium heat. Add the onion and garlic and sauté until translucent.

  4. Add the carrot, bell pepper, zucchini, and peas to the pan. Cook for 5-7 minutes or until the vegetables are tender.

  5. Add the cooked rice to the pan with the vegetables and mix well.

  6. Stir in the chopped parsley and season with salt and pepper to taste.

  7. Serve hot and enjoy!
