How To Make Jewelled Wild Rice with Almonds

Ingredients
- 1 cup wild rice
- 2 cups vegetable broth
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 carrot, diced
- 1 red bell pepper, diced
- 1/2 cup dried cranberries
- 1/2 cup sliced almonds
- 1 teaspoon ground cumin
- 1/2 teaspoon ground cinnamon
- Salt and pepper, to taste
Instructions

Rinse the wild rice under cold water and drain.

In a large saucepan, bring the vegetable broth to a boil. Add the wild rice, reduce heat to low, and cover. Cook for 40-45 minutes or until rice is tender and liquid is absorbed.

In a separate pan, heat the olive oil over medium heat. Add the onion and garlic and sauté until translucent.

Add the carrot and red bell pepper to the pan and cook for an additional 5 minutes, or until vegetables are tender.

Stir in the cooked wild rice, dried cranberries, sliced almonds, cumin, cinnamon, salt, and pepper. Cook for another 2-3 minutes to allow the flavors to meld together.
