A satisfying and flavorful rice dish with seasoned ground lamb mixed in.

Preparation: 20 minutes
Cooking: 30 minutes
Total: 50 minutes

Serves:

Ingredients

  • 1 lb ground lamb
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp paprika
  • 2 cups long grain rice
  • 3 cups chicken broth
  • 1 cup frozen green peas
  • Salt and pepper to taste
  • Fresh cilantro, chopped for garnish

Instructions

  1. In a large skillet, brown the ground lamb over medium-high heat. Drain any excess fat.

  2. Add the diced onion, minced garlic, cumin, coriander, and paprika to the skillet. Cook until the onion is softened and the spices are fragrant.

  3. Add the uncooked rice to the skillet and stir to coat in the lamb and spices.

  4. Pour in the chicken broth and stir to combine. Bring the mixture to a boil, then reduce the heat to low and cover the skillet with a tight-fitting lid.

  5. Simmer for 18-20 minutes, or until the rice is cooked through and the liquid is absorbed. Fluff the rice with a fork.

  6. Add in the frozen green peas and stir to combine. Allow the peas to heat through.

  7. Season with salt and pepper to taste. Garnish with chopped cilantro and serve hot.
