A satisfying and flavorful rice dish with seasoned ground lamb mixed in.
Serves:
Ingredients
- 1 lb ground lamb
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp paprika
- 2 cups long grain rice
- 3 cups chicken broth
- 1 cup frozen green peas
- Salt and pepper to taste
- Fresh cilantro, chopped for garnish
Instructions
-
In a large skillet, brown the ground lamb over medium-high heat. Drain any excess fat.
-
Add the diced onion, minced garlic, cumin, coriander, and paprika to the skillet. Cook until the onion is softened and the spices are fragrant.
-
Add the uncooked rice to the skillet and stir to coat in the lamb and spices.
-
Pour in the chicken broth and stir to combine. Bring the mixture to a boil, then reduce the heat to low and cover the skillet with a tight-fitting lid.
-
Simmer for 18-20 minutes, or until the rice is cooked through and the liquid is absorbed. Fluff the rice with a fork.
-
Add in the frozen green peas and stir to combine. Allow the peas to heat through.
-
Season with salt and pepper to taste. Garnish with chopped cilantro and serve hot.
