Ingredients

  • 2 tbsp vegetable oil
  • 1 onion, diced
  • 1 green bell pepper, diced
  • 2 cloves of garlic, minced
  • 1 cup long-grain rice
  • 1 can (14 oz) diced tomatoes, undrained
  • 1 cup chicken broth
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp cayenne pepper
  • 1/4 tsp black pepper
  • 1/4 cup chopped fresh parsley

Instructions

  1. Heat vegetable oil in a large skillet over medium heat. Add diced onion, bell pepper, and minced garlic. Cook until vegetables are soft and fragrant, about 5 minutes.

  2. Add rice to the skillet and stir to coat with the oil and vegetables.

  3. Add diced tomatoes, chicken broth, paprika, salt, cayenne pepper, and black pepper to the skillet. Stir well to combine.

  4. Bring the mixture to a boil, then reduce heat to low. Cover the skillet and simmer for 25-30 minutes, or until the rice is cooked and the liquid is absorbed.

  5. Remove from heat and let the rice sit, covered, for 5 minutes. Fluff the rice with a fork.

  6. Stir in the chopped fresh parsley before serving.
