How To Make Wild Rice with Orange & Fennel

Ingredients
- 1 cup wild rice
- 2 cups vegetable broth
- 1 orange, zest and juice
- 1 fennel bulb, thinly sliced
- 1 red onion, thinly sliced
- 1 tbsp olive oil
- Salt and pepper, to taste
- Fresh parsley, for garnish
Instructions

In a saucepan, bring the vegetable broth to a boil. Add the wild rice and reduce heat to low. Cover and simmer for 25-30 minutes or until the rice is tender and the liquid is absorbed.

In the meantime, heat olive oil in a skillet over medium heat. Add the sliced fennel and red onion. Cook until softened and lightly caramelized, about 10 minutes.

Once the rice is cooked, fluff it with a fork and transfer it to a serving dish. Add the cooked fennel and red onion.

Zest the orange and squeeze the juice over the rice mixture. Season with salt and pepper, to taste. Stir well to combine.

Garnish with fresh parsley and serve hot.
