How To Make Old Charleston-Style Shrimp and Grits

Ingredients
- 1 lb shrimp, peeled and deveined
- 1 cup stone-ground grits
- 4 cups chicken broth
- 1 cup milk
- 4 strips bacon, diced
- 1 onion, diced
- 1 green bell pepper, diced
- 2 cloves garlic, minced
- 1 can (14 oz) diced tomatoes
- 1 tsp Old Bay seasoning
- 1/4 cup chopped fresh parsley
- Salt and pepper to taste
- Hot sauce for serving
Instructions

In a saucepan, bring chicken broth and milk to a boil. Gradually whisk in grits and reduce heat to low. Cook for 20-25 minutes, stirring occasionally, until thickened. Remove from heat and stir in butter. Season with salt and pepper to taste.

In a large skillet, cook bacon over medium heat until crispy. Remove bacon and set aside, leaving the drippings in the skillet.

Add onion, bell pepper, and garlic to the skillet. Cook until softened, about 5 minutes. Stir in diced tomatoes and Old Bay seasoning. Cook for another 5 minutes.

Add shrimp to the skillet and cook until pink and opaque, about 3-4 minutes per side.

Serve shrimp and sauce over a bed of creamy grits. Top with crispy bacon, chopped parsley, and a dash of hot sauce.
