Ingredients

  • 1 cup black rice
  • 2 cups water
  • 1 tsp salt
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 carrot, diced
  • 1 cup frozen peas
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 2 green onions, sliced
  • Sesame seeds, for garnish

Instructions

  1. Rinse the black rice under cold water until the water runs clear.

  2. In a saucepan, combine the rinsed black rice, water, and salt. Bring to a boil, then reduce heat and simmer for 30 minutes or until the rice is tender and the water is absorbed.

  3. Meanwhile, heat olive oil in a large skillet over medium heat. Add the chopped onion and minced garlic, and cook until softened.

  4. Add the diced bell pepper, carrot, and frozen peas to the skillet. Stir-fry for 5 minutes until the vegetables are crisp-tender.

  5. In a small bowl, whisk together soy sauce and rice vinegar. Pour the sauce into the skillet and stir to combine with the vegetables.

  6. Add the cooked black rice to the skillet and toss everything together until well combined.

  7. Garnish with sliced green onions and sesame seeds.

  8. Serve hot and enjoy!
