Ingredients

  • 2 cups cooked rice
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 1 jalapeno pepper, seeded and minced
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup frozen corn
  • 1 can black beans, rinsed and drained
  • 1/4 cup chopped fresh cilantro
  • Juice of 1 lime

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add onion, red bell pepper, jalapeno pepper, and garlic. Cook until vegetables are softened, about 5 minutes.

  2. Add chili powder, cumin, paprika, salt, and black pepper. Stir well to coat the vegetables with the spices.

  3. Add cooked rice, frozen corn, and black beans. Cook for another 5 minutes, stirring occasionally.

  4. Remove from heat and stir in chopped cilantro and lime juice.

  5. Serve hot and enjoy!
