How To Make Soft-boiled eggs with black rice & aubergine

Ingredients
- 4 eggs
- 1 cup of black rice
- 1 aubergine, diced
- 2 tablespoons of soy sauce
- 2 tablespoons of sesame oil
- 1 tablespoon of honey
- 1 tablespoon of rice vinegar
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions

Fill a pot with water and bring it to a boil. Gently add the eggs and cook for 6 minutes for soft-boiled eggs. Remove from heat and place the eggs in a bowl of ice water to stop the cooking process. Peel the eggs and set aside.

In the meantime, cook the black rice according to the package instructions.

Heat a frying pan over medium heat and add the sesame oil. Add the diced aubergine and cook until softened, about 5 minutes.

In a small bowl, whisk together the soy sauce, honey, rice vinegar, salt, and pepper. Pour the sauce over the cooked aubergine and stir well to coat.

To serve, divide the black rice among 4 plates. Top each plate with a soft-boiled egg and a portion of the aubergine mixture. Garnish with fresh cilantro.
